At the heart of Rosto is a custom-built rotisserie, powered entirely by burning wood without gas or hybrid fuel assistance. The Texas-built system is among the few fully wood-fired indoor rotisserie installations operating in the United States, making wood-fired flavor the defining feature of the restaurant’s concept.
Chickens rotate slowly over an open flame in full view of guests, creating natural caramelization, rich flavor, and the distinctive aroma of wood-fired cooking. The open kitchen reflects Rosto’s commitment to transparency, giving diners a clear view of the preparation and craftsmanship behind each meal.
The intentionally streamlined menu is centered on wood-fired rotisserie chicken, complemented by seasonal vegetables, fresh salads, house-made sauces, and signature sides such as roasted cabbage, macaroni and cheese, and fresh rice.
